Dark Mocha Djimmah is a distinctive coffee originating from the Djimmah (also spelled Jimma) region of Ethiopia, known for its rich flavour profile and unique characteristics.
Origin and Processing
Dark Mocha Djimmah coffee comes from the Djimmah region in southwestern Ethiopia, an area with altitudes ranging from 1,340 to 1,830 meters above sea level. The coffee plants are grown under the shade of larger forest trees, which helps preserve soil moisture and contributes to the coffee's complex flavour. This coffee is typically naturally processed (dry-processed), meaning the beans are dried with the cherry intact, allowing them to absorb sugars from the fruit.
Flavour Profile
When roasted dark, Mocha Djimmah offers a rich and complex taste experience:
Body: Full and rich
Aroma**: Deeply aromatic
Flavour Notes
- Intense sweetness with wine-like dimension
